BEER WITH THE BREWER

1. How was the brewery named?

The brewery was named after my dog Morris and Frank the Stag. Morris was my big shaggy wolfhound who would lay on the floor while I brewed. Frank was an antique Stag who was on the brewhouse wall.

2. What beers do you have at home in your fridge now? 

I don’t have any ‘casual’ beers at the moment, but I do have a fridge in my study full of specialty stouts, porters, barleywine and 1 or 2 whales.

3. Best tip for visiting the brewery?

Bring your 4 legged best mate and enjoy hanging out. Roddie and Sam are the most amazing chefs and the food is epic. You will never leave hungry. And there is live music nearly every day.

4. Pineapple on pizza, YES or NO?

My son asked me that the other week.

5. If you can only use one hop for the rest of your life, what is it?

I have always loved Simcoe

6. If you could collaborate with one other brewery, who would you choose?

I would love to do a co-lab with Future Magic or Carbon 6. Sean and Reese are amazing dudes and really inspire me to push the boundaries of excellence.

7. Some occasions call for the ‘perfect’ beer, what are you reaching for:

• a beach beer? a nice, crispy lager to cut through the salt breeze.
• an airport beer? a solid pint of draught ale.
  
• the end of the day beer? a nice aged whiskey barrel stout.
• the ‘best beer with dinner’ beer? depends on the meal, but I enjoy a marzen or dunkel.
• to kick back and watch sport with? a hoppy and resin forward APA or IPA.

8. What’s the future of craft and how can Craft Cartel beer lovers get on board?

The Craft Beer industry is thriving with the amazing creativity of their brewers. I consider brewing an ‘art’ and passion. Your clients fall in love with your beers and go on the ride as you sculpt and smooth out your recipes. It is the greatest compliment when you see the passion in their soul for your craft.
