TASTING NOTES
Xyauyù Fumè is the most complex expression of Teo’s approach to the creation of what he calls “couch beers”, to be enjoyed and savored slowly. It is a top-fermented beer which has undergone macro-oxidation and has been aged for twelve months in Islay Scottish whisky barrels, which give it a natural peaty flavor. It has a deep dark color with copper nuances; when poured, it has no head and no gas.

The Baladin brewery was originally created in 1996 as a brewpub (production and bar) in Piozzo, Italy – a small village in the Langhe area in the province of Cuneo – by its founder and master brewer Teo Musso.

This led to the first 100% Italian beer made with Italian ingredients, including Italian hops from an experimental cultivation managed by Baladin. It has now become a completely autonomous brewery: from the production of raw ingredients, to their processing, from beer production to the optimization of energy resources and finally distribution.
