The Wild Wit is a Farmhouse Style White Ale that was laid to rest back in 2015 in premium Burgundy barrels which previously had Chardonnay in them. La Sirene were always enamoured at their brewery by the softness that a well-made White Ale can deliver whilst being able to delicately hold itself together for many years in many an environment, and with this inspiration they went to work on creating an ageable white ale that worked as a blank canvas with their house yeast. After a secondary then tertiary fermentation, they hopped this farmhouse White Ale with wonderfully tropical Galaxy to give it a new-world edge.
An independent family owned & operated Urban Farmhouse Brewery, akin to modern-day ‘Saisonniers’ striving for Artistry in brewing. Focussing on producing New World Farmhouse beers in their House Style with finesse, texture and above all crisp drinkability in humble honour of these age-old styles.

La Sirène Brewing began as a response to a calling to create modern day artisanal farmhouse-style beers with character and identity, which quickly evolved into their life-long obsession. Starting life as gypsy brewers in the Victorian Highlands, our artisan brewing adventures swiftly led us to creating their own Urban Farmhouse Brewery next door to the Darebin Creek & National Park in inner-city Melbourne, Australia.
