We sat down for a beer with

e asked the tough questions from pineapple on pizza, to what’s in a brewer’s fridge. Find out below as we were on the “Sauce” with Sam…

1. How was the brewery named?

I spent a Saturday night on the laptop looking up synonyms for booze (there are a lot!). I liked Sauce (i.e. to get on the Sauce) and after checking availability, registered the domain names and business name on the spot. It was around 2am at this point and I was several beers deep. The next day, sober, it still sounded good, so it stuck!

2. What beers do you have at home in your fridge now?

Which fridge? The “drinks fridge” always has a small selection of Sauce Beer & Twizzle Cocktails obviously, and right now it also has a couple of White Bay and Akasha beers. I’ve been to both their taprooms recently and always make an effort to buy takeaways too – support local! My small “cellaring” fridge has a bunch of imperial stouts and barley wines from Aussie and international breweries

3. Best tip for visiting the brewery?

Have fun! Settle in and try as many as you can – we do tasting paddles and we always have some things on tap that you can’t get anywhere else. Friday night is my favourite time to be there, while Saturday is for brewery crawls, and Sunday is pretty family friendly, with live music too.

4. Pineapple on pizza, YES or NO?

Yep! It’s a point of contention in my house though.

5. If you can only use one hop for the rest of your life, what is it?

That would make life (and beer) pretty boring! Variety is the spice of life. I can’t pick just one, just like I can‘t pick a favourite beer.

6.If you could collaborate with one other brewery, who would you choose?

There are so many amazing breweries now, the industry has really come of age. But we’re good mates with all the Inner West breweries, so any of them any day of the week. As for further afield – Big Shed in SA, Otherside in WA, Slipstream in QLD.

7. Some occasions call for the ‘perfect’ beer, what are you reaching for:

a beach beer? Can I choose a Twizzle Cocktail instead? (Of course!) They’re made by us, and are perfect for a day at the beach.
an airport beer? Hazy Pale or IPA
the end of the day beer? Pacific Ale or XPA
the ‘best beer with dinner’ beer? Depends on the meal right? Pale Ale is a good all rounder, but a heavily hopped beer will go well with anything spicy.
to kick back and watch sport with? L ager or Pale ale.

8. What’s the future of craft and can Craft Cartel beer lovers get on board?

Without your support, there is no future for craft brewers. Given the state of the economy, the current trend is for consumers to hunt out cheap beers or alternatives. This is killing the indie beer industry, so you can get on board by continuing to treat yourselves with great, local, premium craft beer, and keeping our industry alive!
