1. How was the brewery named?

Easy. The brewery is a build it yourself deal. No consultants, no packaged components. Lots of research and experimentation. What is put together is a self designed and constructed prototype brewery in the manner of kids building their own place – a cubby house.

2. What beers do you have at home in your fridge now?

In addition to all the Cubby Haus Beers, there’s a range of craft beer from the NSW South Coast including Drift Backside XPA, Frog Hollow Hazy, and Pilsner.

3. Best tip for visiting the brewery?

When visiting the brewery, come hungry and thirsty. Try a sample paddle while sharing a pizza.

4. Pineapple on pizza, YES or NO?

We even have a Hawaiian pizza with pineapple and olives. The olives provide the controversy!

5. If you can only use one hop for the rest of your life, what is it?

My desert island hop would be Fuggles, as this is the main hop used in the brewers favourite style – Extra Special Bitter.

6. If you could collaborate with one other brewery, who would you choose?

I would love to collaborate with the lovely folks at Stomping Ground because their beers are awesome and they are all lovely.

7. Some occasions call for the ‘perfect’ beer, what are you reaching for:

• a beach beer? South Pacific Ale

8. What’s the future of craft and can Craft Cartel beer lovers get on board?

The future of craft is currently in the balance. Independent brewers are being squeezed out by the large players. Craft Cartel beer lovers can get on board by trying beer from as many independent brewers as possible. Embrace flavour and quality!
