The Dominique Portet Fontaine Cabernet Sauvignon is another beautifully approachable yet complex example of Yarra Valley Cabernet that delivers the exceptional value for money you’ve come to expect from Portet’s Fontaine label. A blend of 87% Cabernet Sauvignon, 10% Merlot, 2% Malbec and a dash of Petit Verdot, they picked and sorted all the grapes by hand. The grapes were then destemmed and gently crushed before fermenting at relatively cool temperatures in order to highlight the beautiful aromatics of the Cabernet.
Ninth-generation winemaker Dominique Portet chose the cool climate of aptly named Coldstream in the Yarra Valley as home to the eponymous winery he founded in 2000. It was not only the culmination of a tenacious search for grapegrowing terroir to rival that of his native Bordeaux but also the start of a new chapter in a winemaking story that has its roots in France in the early 1700s.
