C O M E T hops is an old and wild American hops. Back in the day, it was used in lagers for its bold bittering properties but commercial production stopped in the ’80s because of its flavours judged too intense. With the rise of hoppy US Pale Ales, it is now making a come back. This is a very complex hop delivering layers of spice, earthiness and strong citrus.

In every restaurant kitchen and brewery they’ve worked since arriving in Australia, owners Thomas and Vince have always been called ‘Frenchies’. As two ‘Frenchies’ living in Australia, with an immense love of the Australian lifestyle and its people, they decided to adapt their Parisian bistronomy culture to the Australian taste and terroir.
